TOP SECRET
Southie Style Cherry Cheese Cake
- First you must use a 9" "High Backed
style bake pan, like a German Cake Dish. DO NOT USE A GLASS OR
CERAMIC BAKE PAN OR THE CRUST WILL BURN!
- Use a food processor to grate the ingredients.
- Prepare the crust
- 2 cups of finely chopped Graham Crackers
- 1/2 cup of finely chopped walnuts
- 1/2 cup of finely chopped pecans
- 1/2 teaspoon of cinnamon
- 3/4 cup of melted (REAL BUTTER) ****dont
use margarine****
- Mix together with a spoon, and form the crust
to the bake pan , including the sides of the bake pan.
- Place the crust in a 325 degree oven for
5 minutes, just long enough to dry and harden the crust slightly.
- REMOVE FROM OVEN
- Mix the Batter
- 4 -8 oz packages of Philly cream cheese
- Put in a bowl and microwave to soften (1
1/2 min) DONT MELT INTO A LIQUID
- 1 cup sugar
- 2 Tablespoons SIFTED all purpose flour
- 1 teaspoon vanilla
- 1/4 cup milk
- 2 eggs
- 1 egg yolk
- 1/2 Lemon(grate the outside skin)

from 1/2 lemon ) ...........Axxis"
- Mix the ingredients in a food processor or
a mixer for 5 minutes untill totally smoth and soupy.
- Pour the batter into the crust shell, and
smooth around.
- Bake at 375 degrees for 1 hour and 15 min.
- Check the batter with a toothpick, (The top
will CRACK, you are looking for the top to be a light to med
brown color)
- Remove from oven, let cool, and put into
the refridgerator for a few hours, LEAVE THE CAKE IN THE PAN
- When COMPLETELY cool, take the cake from
the fridge and remove the pan.
- I think this means that you will turn the
cake upside down onto a platter, This works best by dipping the
bottom and sides into HOT water for a few moments to loosen the
crust from the pan,CAREFULL! DONT LET THE WATER COME OVER THE
EDGES...............Axxis
- Use a can of cherry pie filling/with cherries.
Place cherries on the outside edge of the cheesecake, and spoon
the cherry pie filling around the top. Allow the filling to drip
over the edges. Sprinkle additional finely chopped walnuts and
pecans blended together around the top of the cheesecake.
